Cranberry Sausage and Apple Dressing

Introduction
This is my signature stuffing recipe. The cranberrys and apple chunks combine so well with the sausage. I use turkey sausage because it's not greasy and you have a pound cooked because there is so little fat.
Ingredients

1 stick unsalted butter
1 large onion , chopped 
4 celery ribs with leaves, chopped
10 cups cubed stuffing bread or firm white  bread, cut into 1/2-inch cubes  and dried overnight in the oven
1/4 cup chopped fresh flat_leaf_parsley
3 cups turkey stock or chicken_broth
2 tsp poultry_seasoning
1/4 tsp dried thyme
1/2 tsp fresh ground black_pepper
1 tsp onion_powder
1/2 tsp salt
1 pound bulk turkey breakfast sausage
1cup dried cranberries
2 large granny smith apples, cored and diced

Directions
Step: 1

In a large skillet, melt the butter over medium heat. Add the onion and celery. Cook, stirring often, until the onion is translucent.

Step: 2Add the turkey sausage and cook, breaking up large pieces until all is browned. Add 1/2 cup of the stock,the apples, salt, pepper, poultry seasoning ,thyme, parsley and onion powder.
Step: 3Cook on medium high heat just until boiling.Remove from heat.In a large bowl combine bread  and cranberries. Pour sausage mixture over the bread and mix well to combine.
Step: 4Add enough stock to moisten the dressing, about 2 cups. Taste and adjust salt as needed. Stuff the turkey loosley with the mixture. Or place dressing in a buttered casserole dish. Cover and bake 45 minutes.
