The marmalade gives a nice tangy glaze and flavor to the potatoes. | | Ingredients | | 5 or 6 large sweet potatoes , about 4 lb The Glaze 1 cup firmly packed light brown sugar 1/2 cup honey 1/2 cup butter 1 tsp vanilla_extract 1/2 cup orange marmalade
| | Directions | | Step: 1 | Scrub potatoes and place in a large pot of water. Bring to a boil and cook until potatoes are just barely tender but still very firm, about 15 minutes. Cool and peel potatoes. Slice 1/2 inch thick and arrange in a single layer in an 8 to 9 inch buttered baking dish. In a saucepan heat honey, marmalade and butter until butter is melted.Add brown sugar and cook over medium heat until mixture bubbles, about 10 minutes.Remove from heat and add vanilla.Pour glaze over potatoes. Bake the potatoes on 375 degrees for aboaut 40 minutes, until tender. Baste the potatoes at least once during cooking with the glaze
