Green Chili Chicken

Introduction

This is my version of another similar recipe that i came up with many years ago. It can be made with canned chicken or fresh and either way taste great.

Ingredients

4 Half chicken breasts (or 5 cups cubed cooked chicken)
2 cups chicken_broth
1 small can diced green_chili's, undrained
1 cup diced onion
1 cup diced carrot
1 cup sliced celery
1/4 tsp ground cumin
1/2 tsp ground oregano
1 tsp chili_powder
1 tsp salt
1/2 tsp black pepper
1 can cream of celery soup, undiluted
1 cup chow mein noodles
2 Tbsp butter
1 cup shredded cheese, cheddar , jack, whatever you like best

Directions
Step: 1

Bring chicken broth to a boil in a medium sized pot and add chicken breasts.Turn down to a simmer and cook until chicken is tender (about 25 minutes).Check liquid level and add a bit of water or white wine if needed to keep chicken covered.
Cool chicken, remove skin and bones and shred.Reserve broth (strain if needed).

Step: 2In a skillet melt the butter, add vegetables and saute until onion is translucent. Remove the vegetables from the heat and cool. In a large bowl combine cream of celery soup,seasonings,canned green chili's and 1/2 cup of the reserved chicken broth,stirring well to smooth out any lumps.
Add sauteed vegetables and chicken. Pour into a buttered casserole dish. Bake at 350 degrees for 30 minutes. Top with chow mein noodles and cheese and return to oven until cheese is melted.
Step: 3

Serve over hot cooked rice .

Serving suggestion # 1: Layer corn tortillas that have been toasted on a hot griddle in a round casserole with layers of the chicken mixture and shredded cheese, like you assemble a lasagna. Bake as directed.

Serving suggestion #2: Using large flour tortillas,make burritos with the chicken mixture , shredded cheese and my Easy Spanish Rice.
