Buttermilk Fried Chicken

Introduction

Probably the most loved southern dish is fried chicken. This recipe cooks up crispy juicy and so  tender. The buttermilk tenderizes the chicken and gives it a wonderful flavor.

Ingredients

1 3-4 pound frying chicken, cut up or a combination of your favorite pieces
1 quart buttermilk
2 tsps poultry_seasoning
1 1/4 tsps sea_salt
1 tsp black pepper
1 tsp creole_seasoning (I like Zatarain's best)
1 tsp onion_powder
1/4 tsp cayenne_pepper
1/4 tsp crushed thyme
2 eggs, beaten
2 quarts vegetable_oil for frying

Coating:
1 1/2 cups self_rising_flour
1/2 cup cornmeal
1/2 tsp salt
2 tsp paprika
1/2 tsp black_pepper
1/2 tsp poultry_seasoning
1 tsp onion_powder

* Store any leftover coating mixture in a ziplock  baggie in the freezer . When you want to fry some fish or a few pieces of chicken it makes short work of it.
 

Directions
Step: 1

Combine egg and seasonings in a large glass (non metal) bowl. Mix well.
Add buttermilk and whisk lightly. Add chicken pieces and push down to get them all under the buttermilk mixture.
Cover the bowl and marinate chicken in refrigerator at least 2 hours, or overnight.

Step: 2
Heat oil in a deep heavy pot or dutch oven. I use my Mama's old cast iron dutch oven. When a bread cube dropped in begins to sizzle immediately , the oil is ready. 
Step: 3Combine coating ingredients in a large bowl.
Remove chicken from buttermilk mixture and dip in the flour mixture. Shake off excess flour and place in the hot  oil.
Fry a few pieces at a time, taking care to not crowd the chicken,until a nice golden brown and the juices run clear when pierced with a fork.
Step: 4Drain pieces on a rack placed over a cookie sheet (preferred method) or on paper towels and keep warm in the oven until all the chicken is fried.
