Wrap Sandwiches

Introduction

I made these every morning when I worked in the cafe at Borders Books and Music. We had a lot of vegan employees and nothing they could eat. These went really fast and customers would even call in to place orders to make sure there would be some when they got there.This is one of my favorite sandwiches. I make them winter and summer. Great for entertaining, lay out the fixings and let everyone create their own. I've listed some of my favorite fillings but experiment to create your own. These are a great lower carb sandwiches and a neat way to get kids to eat their veggies.

Ingredients
Flour wraps or large flour_tortillas (flavored wraps are also good)

Suggestions For the Wrap Spread
Hummus dip
Soft cream_cheese
Brie or other spreadable cheese

A combination of the following veggies:
Carrots ,  japanese_eggplant, red and yellow bell_peppers , zucchini , thick onion slices, fennel , sliced lengthwise in even strips.
Spread hummus or spread of your choice on the wrap to 1/2 inch of the edge. Place veggies to one side of the wrap. Fold wrap as directed on the package.
I've listed some combinations below, but create your own.

The Italian:
Stracchino,fresh ricotta or gorgonzola_cheese
Roasted pepper strips (canned or home made)
Sliced marinated artichoke hearts
Sliced fresh mozzerella
Prosciutto , salami, mortadella or bresaola
Sprouts or basil leaves
Romaine lettuce leaves

The Vegan:
Hummus spread
Fresh sprouts, such as broccoli or green onion sprouts
Canned black beans, drained
Assorted veggies as listed above

The Greek:
Goat cheese mixed up until creamy
Sliced kalamata olives
Crumbled feta cheese
Flaked tuna
Fresh spinach leaves
Tomato slices

 



Directions
Step: 1

Arrange vegetables on a baking sheet and brush with olive oil, sprinkle with sea salt and freshly ground black pepper. Roast in a 400 degree oven for 10 to 15 minutes or until crisp tender.

Spread the tortilla with the hummus or whatever your using. Then beging layering your filling choices. Start with the big stuff like lettuce, then add the veggie slices,beans etc.
Fold the bottom of the wrap up about 1 inch.
Fold one side in towards the filling and then start rolling. You should have a neat little bundle to eat out of hand. But have plenty of napkins available as these are usually juicy.

 
Note: After I bought my panini grill I started grilling my veggies, but either way works well.
