Introduction

This cake is so pretty and really adds a warm touch to the holiday breakfast table.

Ingredients

For the topping:
1/2 cup dark brown_sugar
1 tablespoon cornstarch
1 teaspoon ground_cinnamon
1 1/2 cups fresh cranberries , chopped roughly
1 1/2 cups diced apple
1/2 cup cranberry juice

For the cake:
1 1/2 cups all_purpose_flour
1 teaspoon baking_powder
1/4 teaspoon salt
1/4 teaspoon baking_soda
1/4 cup canola_oil
3 tablespoons butter , softened
3/4 cup granulated_sugar , plus more for sprinkling
1 egg
3/4 cup low-fat yogurt
1 tablespoon vanilla_extract

 

Directions
Step: 1Preheat oven to 375 and spray a 9-inch springform pan with non-stick spray. Whisk brown sugar, cornstarch and cinnamon in medium saucepan. Stir in cranberries, apple and juice, cooking and stirring to a boil, then continuing to cook till berries soften. Remove from heat and allow to cool.
Step: 2For the cake, whisk flour, baking powder, salt, and soda in a medium bowl. In the bowl of a mixer, combine oil, butter, 3/4 cup granulated sugar, beating until the mixture is light. Mix egg, yogurt and vanilla in small bowl.
Alternately add dry ingredients and yogurt mix to stand mixer bowl, beating till smooth. Spread batter into prepared pan and top with topping. Bake 45 to 50 minutes or until a cake tester comes out clean. Transfer to wire rack, topping side up,to cool and sprinkle with sugar.
