Scallops au gratin

Introduction
Very simple yet elegant, this dish would make a great starter or fish course.
Ingredients
8 scallops in their shells (or 8 whole scallops and 8 scallop dishes)
1/2 cup breadcrumbs
1/4 cup grated Parmigiano_Reggiano
1 garlic_clove , minced
1/2 bunch flat leaf parsley , finely chopped
1/4 cup extra-virgin olive oil
Sea_salt and black_pepper to taste
Directions
Step: 1Preheat oven at 325°F
Wash the scallops, and open them with a sharp knife, discard the empty half shell.
In a bowl, combine the breadcrumbs, the parmigiano reggiano, salt, pepper, 3/4 of the parsley, garlic and extra virgin olive oil.
Top each scallop with the mixture, and drizzle with a bit more of extra virgin olive oil.
Place scallops in an oven proof pan and bake for about 20 minutes.
Garnish with the remaining parsley and serve.

Suggested wine: Montepulciano D'Abruzzo white
