Time | 15 min | | Cook Time | 15 min | | Introduction | | A nice pasta dish, with a delicate flavour. | | Ingredients | | 12 oz penne pasta 1 onion minced 1 can (8 oz) white beans (cannellini are the best) 1 oz unsalted butter 1/2 cup milk 1/2 bunch fresh parsley , minced Salt White_pepper Fresh grated Parmigiano_Reggiano | | Directions | | Step: 1 | Bring plenty of salted water to a boil. Drain and rinse the cannellini beans. In a large pan, sautee the onion with the butter until soft and translucent. Add the beans and milk. Adjust salt and pepper to taste and let cook on medium/low heat for 10 minutes. Smash the beans with a fork or potato masher, or put them in a food processor: at the end you should get a really soft creamy consistency. If it is too stiff add a couple of tablespoons of the pasta water.Cook the pasta al dente, according to package. Drain. Put pasta and cream back in the pan, sautee for couple of minutes, add the minced parsley and the parmigiano cheese. Let sit for one minute and serve
