Time | 15 min | | Cook Time | 30 - 40 min | | Introduction | | This dish is prepared by Algerian Muslims during the holy celebration of Ramadhan and consumed after a day of fasting. It's almost a dessert, with lot of sugar and it's cooked with no salt to prevent thirst the next day for those fasting. | | Ingredients | | 1 pound of Lamb 1/2 pound of Prunes 1/4 pound of Raisins 1/2 cup of Butter 1 Onion 1 cup of sugar 1 tablespoon of cinnamon 1 tablespoon of Orange Blossom Water (optional) | | Directions | | Step: 1 | Soak the prunes and the raisins in water for 15 to 20 minutes. Cut the meat in bites chunks, finely dice the onions. In a large casserole brown the meat, the onion, cinnamon and butter, add water and bring to a boil. Add the prunes, the raisins, and the sugar and optionally, the orange blossom water. Cover and let simmer for about 20 minutes (it might take longer) Once the meat is tender and the prunes are plumped, uncover to reduce sauce. Note for the non muslim: you can add a dash of salt for a better tasting result. |
