Crispy Oatmeal Raisin Cookies

Introduction
I like my oatmeal cookies on the crisp side.These are chewy and crunchy. These cookies won't stay long in the cookie jar!
Ingredients

1/2 cup light brown sugar ,packed
1/2 cup granulated_sugar plus extra for rolling the dough balls in
1/2 cup shortening
3 Tbsps soft butter
1 Large egg
1 cup rolled oats
1 cup Gold Medal all_purpose_ flour
1/2 tsp baking_soda
1/2 tsp salt
1/2 tsp baking_powder
1 tsp vanilla _extract
1/2 cup raisins
1/8 tsp cinnamon
1/2 cup coconut or nuts (optional)

Directions
Step: 1In a large glass bowl, cream shortening, butter and sugars until light and fluffy.
Add the egg and vanilla and beat well.Sift together the flour, baking soda, salt and baking powder and add to the creamed mixture.
Blend gently until the mixture is moistened.
Step: 2Form the dough into small balls or use a cookie scoop to keep the cookies the same size.
Roll the dough balls in granulated sugar and place on a greased baking sheet.
Very lightly with fingers or a flat bottomed class,press each dough ball to flatten a little.
Bake at 350 degrees for 10 to 15 minutes or until lightly browned. Cool on a wire rack.
Store these cookies in an air tight container to maintain their crisp texture.
