If you have a Asian grocer nearby and can buy Chinese roast pork, that really makes this dish special.But this is a good way to use leftover cooked meats. | | Ingredients | | For egg foo young:
1 cup diced cooked chicken , pork or ham or 1 cup salad shrimp
2 tbsp. butter
1 1 pound can bean sprouts, drained, reserve juice
1/2 cup chopped onion
1/2 cup sliced celery
1 tbsp. chopped parsley or cilantro
6 lightly beaten eggs
1/2 cup finely sliced green_onion , white and green part
1 tsp. salt
Oil for frying (peanut oil is best for this dish but vegetable oil will do)
For sauce:
Juice from cooked vegetables
1 cup juice from canned bean_sprouts
1 Tbsp cornstarch
1 tsp granulated_sugar
2 Tbsp soy_sauce
| | Directions | | Step: 1 | Brown pork, ham or chicken lightly in butter. (If using shrimp skip this step and add the shrimp directly to the egg mixture and proceed as directed).
Add bean sprouts, onion, celery and green pepper. Cover and cook a few minutes until onion is transparent. Cool slightly. Drain any juices from the cooked vegetables and reserve.
Spoon cooled meat and vegetable mixture into beaten eggs. | | Step: 2 | Add salt and mix thoroughly.Heat about about 1/2 inch of oil in a skillet. Pour 1/4 cup mixture into pan as you would a pancake. Make 1 or 2 at a time so as not to crowd the patties.Flatten each egg patty to 1/2 inch thickness. Cook until brown on both sides, turning once. Drain briefly on absorbent towels. Arrange patties on a heated platter and cover with the sauce.Sprinkle green onion over all.
Makes 12 patties. | | Step: 3 | For the sauce:
Combine juices, setting aside 1/4 cup of liquid. Heat to boiling.
Blend cornstarch, sugar and the 1/4 cup reserved vegetables juices. Add to boiling juice. Cook, stirring constantly, until thickened. Add soy sauce. |
