Introduction

Keep a jar of my roasted tomatillo salsa in the fridge and easy meals abound.This is great served sliced or in warm flour tortillas with  spanish rice and beans. Offer a bowl of the salsa verde to spoon over the pork.If I'm serving it in tortillas, I grill some assorted peppers and onions with the pork.Add a frosty margarita and it's fiesta time!

Ingredients

2 pounds pork tenderloin or pork butt (This is also great with chicken)
1 1/2 cups roasted_tomatillo_salsa
1/2 cup Tequila
1/4 cup
olive_oil
1/4 cup lime juice
1/2 cup chopped cilantro
3 large garlic_cloves , smashed
1 tsp salt

Directions
Step: 1

In a bowl combine the salsa, oil,lime juice, tequila ,cilantro, garlic and seasonings.
Stir to blend well. Place the pork in a 1 gallon zip lock baggie (or other covered container of your choice) and pour the marinade on. Place in the refrigerator overnight or at least 6 hours.

Step: 2When ready to cook, prepare your grill for indirect cooking. Oil grills and let them get hot. Place pork loin on the hot grill. Discard marinade. Let the pork sear a few minutes to develop nice grill marks, then turn and repeat the process until seared all over.Cover the grill with vents open half way and cook the pork for about 40 minutes, or until the internal temperature reaches 150F to 160F degrees, turning over half way through cooking time.
When the pork is done, remove to a warm platter and let it rest for 10 to 15 minutes. Slice against the grain.
