Arugula and Pear Salad

Introduction
This salad is also great with a citrus fruit, such as pink grapefruit. sections, or blood oranges if you can find them.
Ingredients

12 cups (about 8 ounces) loosely packed butter lettuce leaves
Coarsely ground salt
Freshly ground black pepper
4 pears, peeled, cored and sliced
6 ounces Asiago cheese, thinly shaved or grated
3 tablespoon glazed walnut or pecan pieces 

.Dressing: 1/4 cup each honey and seasoned rice vinegar.
Pinch of sea_salt and freshly ground black pepper
1 to 3 tablespoons extra_virgin_olive_oil
2 tsps dijon mustard .

Directions
Step: 1

Preheat oven to 350 degrees. Spread the walnuts or pecans on a baking sheet and toast in the oven for approximately 6 minutes or until golden brown. Remove from oven and transfer onto a plate and let cool.

Step: 2

Arrange salad on individual chilled salad plates,season with salt and pepper. Arrange pear slices along the side of plate and top with the asiago cheese and walnuts or pecans.

 

Step: 3Combine the honey , mustard , salt, pepper and rice vinegar in a glass bowl. Drizzle in the olive oil while whisking. Whisk until dressing is emulsified.
Drizzle a little dressing over each salad.
