Cinnamon Orange Bread Pudding

Introduction
This is a delicious, fragrant bread pudding.Top with a bit of hard sauce or orange cream for an extra fancy dessert.
Ingredients

1 smal loaf (about 1 pound)dry cinnamon raisin bread, crust trimmed and cubed
5 large eggs
1/2 cup orange juice
1 1/2  cups milk
1/4 cup melted butter
1/2 cup granulated_sugar
2 Tbsps packed brown_sugar
1 tsp vanilla_extract
1/8 tsp salt
1 Tbsp orange zest
1 cup raisins (dried cranberries work well in this recipe also)
1 tsp ground_cinnamon

 

For low fat diets: Use an equal amount of low fat egg product and skim milk.The butter can be eliminated also.The results won't be as rich as the original recipe but still delicious.

Directions
Step: 1Preheat oven to 325. Place raisins in a saucepan and add orange juice. Bring to a boil and turn off, cover and let sit until raisins are plumped.Prepare raisin bread as directed above. Butter a 2 quart casserole.In a large bowl, wisk the eggs, sugars and salt  together.Add milk, vanilla. cinnamon,orange zest and cooled plumped raisin with any remaining orange juice in the pan. Melt butter and cool slightly before adding to egg mixture. Add raisin bread and let the mixture sit so the bread can absorb the custard, about 10 minutes.
Pour the mixture into the buttered casserole. Bake pudding for 45 minutes to one hour, until a knife inserted in the center comes out clean. Serve warm or cold. Refrigerate leftovers
