For low fat diets: Use an equal amount of low fat egg product and skim milk.The butter can be eliminated also.The results won't be as rich as the original recipe but still delicious. | | Directions | | Step: 1 | Preheat oven to 325. Place raisins in a saucepan and add orange juice. Bring to a boil and turn off, cover and let sit until raisins are plumped.Prepare raisin bread as directed above. Butter a 2 quart casserole.In a large bowl, wisk the eggs, sugars and salt together.Add milk, vanilla. cinnamon,orange zest and cooled plumped raisin with any remaining orange juice in the pan. Melt butter and cool slightly before adding to egg mixture. Add raisin bread and let the mixture sit so the bread can absorb the custard, about 10 minutes. Pour the mixture into the buttered casserole. Bake pudding for 45 minutes to one hour, until a knife inserted in the center comes out clean. Serve warm or cold. Refrigerate leftovers |
