Introduction

This is an easy, tasty recipe to use up leftover chicken and rice. Of course you can always cook up fresh chicken and rice. Either way this is a delicious and different soup.

Ingredients

2 quarts chicken broth
1 cup diced cooked chicken
1/2 cup diced carrots
1/2 cup finely diced yellow onion
1/2 cup diced celery
1 cup cooked rice (wild rice is especially nice)
3 Tbsp butter
1/4 cup minced fresh parsley
1/8 tsp fresh ground black pepper
1 tsp fresh lemon zest
3 Tbsp fresh lemon juice

 

Directions
Step: 1

In a 4 quart soup pot, melt the butter over medium heat. Add the onion and cook, stirring often until the onion is translucent. Add the chicken stock, celery and carrots. Simmer until carrots are barely tender.Add the pepper, and chicken  and simmer about 10 minutes.Add rice, lemon zest and juice, parsley and simmer 5 minutes. Adjust salt to taste and serve with a lemon slice on top if desired.
