Introduction
This recipe was sent to Guido by our friend Talitha who lives in Holland. This is a translation of a translation but it sounds delicious to me. Talitha says that with the amount of salisfy roots she has listed it makes 2 large servings, so I am guessing this is a main dish meal. I'm going to find some salisfy and try this soon!
Ingredients

Fresh ground black pepper
1/4 cup fresh minced herbs, such as thyme and sage
1-2 garlic_cloves , minced
200 grams (1/2 pound) off smoked breakfast bacon

Directions
Step: 1

Wash the sand from the scorzonera and and cut off the hard ends Bring a large pot of salted water to a boil and cook them for about 20 minutes. If they are small roots, cook them for about 15 minutes.Drain and cool slightly and peel off the black skin while still warm (it's easier then)
Slice the roots in pieces about 1/2 inches thick.
Place the sliced roots in an ovenproof baking dish and sprinkle minced garlic over them.Grind some fresh black pepper over the roots and sprinkle with the minced herbs.Roll pieces of the root in the slices of bacon, fitting 2 to 3 pieces in each slice if possible.Place rolls side by side in the baking dish.
Bake in a preheated oven ( 200 C or 390 F) for about 20 minutes.
