Basil Scallops

Introduction
This recipe uses only a few ingredients, but highlights all the mediterranean flavors in this easy dish.
Ingredients
8 scallops
1 garlic_clove , minced
2 tbs extra_virgin_olive_oil ( from Liguria region is reccomended)
1 oz fresh basil , minced ( genovese is wonderful)
1 tbs all_purpose_flour
1/4 cup  fish stock (fresh is better but canned is fair)
sea_salt and  white_pepper to taste
Prepared polenta for serving
Directions
Step: 1In a frying pan, sautè garlic in extra virgin olive oil for no more than one minute, add the scallops and cook for one minute more.
Sift in the flour, and stirring constantly add the fish stock and the basil.
Cook covered for 3-4 minutes, untill the sauce is thickened and creamy.
Season with salt and pepper
Arrange into serving dishes  with slices of polenta with the creamy sauce poured all over.
Garnish with a fresh small basil leaf.
