I have used parmesan and asiago cheese, blended half and half and it worked great.You can experiment with any semi hard to hard cheese. | | Directions | | Step: 1 | In a large bowl, sift the flour, salt, baking powder and paprika. Add the cheese to the flour mixture and toss to mix well. In a small bowl beat the egg white, water and butter together with a fork.
Pour the butter and egg mixture into the flour mixture and mix well until a soft dough forms.Knead the dough into a ball.Set aside, covered with a clean cotton cloth to rest for 10 minutes. | | Step: 2 | Heat the oven to 375 F.Lightly grease 2 large baking sheets or line with silipat baking mats.Divide the dough into two equal pieces. On a lightly floured board, roll out each half of the dough very thinly. With a 1 1/2 inch cookie cutter,cut the dough into rounds, stars etc as desired. Place the crackers 1/2 inch apart on the prepared baking sheets. With the tines of a fork, pierce the center of each cracker. Bake the crackers 20 to 25 minutes, or until lightly browned. Cool the crackers completely on wire racks. Store in an air tight container. |
