Cheddar Crackers

Introduction
These melt in your moth crackers will dissapear quickly. They are great made as the recipe says, or you can get creative and add cracked pepper, or sprinkle lightly with salt before baking.Add dried herbs or a pinch of crushed pepper flakes.Kids love to make these too.
Ingredients

2 cups all_purpose_flour
1/2 tsp sea_salt
1/4 tsp paprika
1/4 tsp baking_powder
1 cup finely shredded cheddar_cheese *
1 egg white
1/2 cup cool water
2 Tbsps butter , melted and cooled

I have used parmesan and asiago cheese, blended half and half and it worked great.You can experiment with any semi hard to hard cheese.

Directions
Step: 1

In a large bowl, sift the flour, salt, baking powder and paprika. Add the cheese to the flour mixture and toss to mix well. In a small bowl beat the egg white, water and butter together with a fork.

Pour the butter and egg mixture into the flour mixture and mix well until a soft dough forms.Knead the dough into a ball.Set aside, covered with a clean cotton cloth to rest for 10 minutes.

Step: 2

Heat the oven to 375 F.Lightly grease 2 large baking sheets or line with silipat baking mats.Divide the dough into two equal pieces. On a lightly floured board, roll out each half of the dough very thinly. With a 1 1/2 inch cookie cutter,cut the dough into rounds, stars etc as desired. Place the crackers 1/2 inch apart on the prepared baking sheets. With the tines of a fork, pierce the center of each cracker.
Bake the crackers 20 to 25 minutes, or until lightly browned. Cool the crackers completely on wire racks. Store in an air tight container.
