Rhubarb Coffee Cake

Introduction
This is a wonderful spring breakfast treat. Mix strawberries and rhubarb for a nice change. For a really decadent treat, use the streusel and icing as shown.
Ingredients

For The cake:
1/2 softened butter
1 Cup granulated_sugar
2 eggs
1 tsp baking_soda
1/2 cup sour_cream
2 Cups all_purpose_flour
1 1/2 tsp baking_powder
1 tsp vanilla_extract
1/4 tsp orange zest

Fruit topping and filling:
3 cups sliced fresh rhubarb
1  cup granulated_sugar
Pinch of salt
1/2 tsp ground_cinnamon
1 Tbsp butter

 

For streusel : Combine 1/2 cup softened butter with 3/4 cup brown sugar and 1/4 cup all_purpose_flour . Mix well with a fork or fingers to make a crumbly texture. Sprinkle over the fruit layer on the cake top before baking.

For Icing: 1 cup sifted powdered sugar , 2 tablespoons cream or enough to make a pourable icing. Drizzle over cooled coffee cake.


Directions
Step: 1

For the rhubarb:
In a saucepan, combine the rhubarb,sugar and salt. Set aside and allow the mixture to sit to draw juices from the rhubarb, about an hour.

Step: 2Over medium heat, bring the mixture to a slow boil. Cook for about 15 minutes stirring often. Remove from the heat and add the butter and cinnamon. You can adjust the sugar at this point to suit our taste. Cool to luke warm.
Step: 3For the cake
In a mixing bowl cream together the sugar, butter and eggs until light and fluffy. Combine baking soda ,sour cream ,vanilla and orange zest and add to butter and sugar mixture.Add flour and baking powder.

 

Step: 4

Pour half of the batter into a a buttered 10 inch baking pan. Using about one cup of the rhubarb mixture, drop spoonfulls over the batter and gently spread out. Top with remaining batter. Drop remaining rhubarb sauce in small spoonfulls over the top of the cake.You may have some sauce left over, but it's great on toast!
Bake at 350F for 45 minutes or until a toothpick comes out clean when tested. Serve warm or cold.
