Introduction
This is a nice appetizer delicate, but flavorfull.
Ingredients

6 oz very  fresh,soft white bread, crust removed
6 oz Grana Padano cheese, grated
1/2 cup milk
4 eggs
3 oz  stracchino (diced) or mascarpone cheese
Pinch of freshly grated nutmeg
Pinch of sea_salt
1 Tbs minced parsley
All_purpose_flour
Oil for frying

Directions
Step: 1Soak the bread in the milk. Squeeze the milk from the bread into another bowl, and place in a mixing bowl. Begin working in the Grana Padano, (your hands are best for this) and the stracchino (diced) or the mascarpone.
Work in 3 eggs, parsley, nutmeg and salt.
Work the dough  energically, adding  some more  of the reserved milk  in batches, just in case it's too hard.
Let sit for 3 hours.
Step: 2Make small  (1.1/2" - 2") balls with the dough.
in a deep dish lightly beat last egg. Brush the balls with the egg  and roll them in the flour.
Fry in very hot oil  until light golden brown.
Drain on absorbent paper towels before serving.
