Ham and Mascarpone Patè

Introduction

This paté  is  a very nice  filling  for Vol au Vent (puff pastry shells), or served accompained with toasted bread or crostini.

 

Ingredients

1/2 lb cured ham or italian prosciutto cotto, diced
1/4 lb fresh ricotta
1/4 lb mascarpone
1 shot of brandy (1 ounce)
Pinch of freshly ground nutmeg
Salt
White_pepper

Directions
Step: 1

In the food processor combine everything but the brandy.
While mixing drizzle the brandy and continue mixing until a smooth paste.Line a dome shaped mold with plastic film, and pour in the paté.
Let chill in the fridge  for a couple of hours before serving.
When ready, unmold the paté on a serving plate, and garnish with pickled vegetables and green salad.
