Serve them with a dish of gelato or a nice dessert wine ,Guido suggests a nice Marsala, to end a great Italian meal. | | Ingredients | | 2 cups unbleached all_purpose_flour 1 cup granulated_sugar plus extra for rolling 1/2 teaspoon baking_soda 3/4 cup extra_virgin_olive_oil 4 teaspoons lemon_zest 1 teaspoon lemon juice Pine_nuts or candied cherrie halfs for garnish if desired | | Directions | | Step: 1 | Heat oven to 350 degrees. Line two large baking sheets with baking parchment or silicone baking sheets. | | Step: 2 | Sift together flour, sugar and baking soda in a medium-sized bowl.
In a small bowl, stir together remaining ingredients. Add to dry ingredients, stirring to combine until the mixture comes together in a uniform mass. | | Step: 3 | Using your hands, roll the dough into balls 3/4 inch to 1 inch in diameter . Roll the dough balls in granulated sugar and place them on the baking sheets, 2 inches apart. Flatten each cookie slightly if desired and place a cherry half on top or press a few pine nuts into the dough. | | Step: 4 | Bake cookies, 1 sheet at a time, until very lightly browned, about 15 minutes.
Transfer to a wire rack and cool completely. Store in airtight container at room temperature for up to 3 days.
Makes about 60 cookies. |

No Comments Allowed for Anonymous, please register Re: Olive Oil Cookies (Score 1) By paulamathers on Monday, October 02, 2006 @ 13:34:02 CEST (User Info | Send a Message) | | i think i made these a bit too thin, they really need to be tiny balls as well as they spread out quite a bit. i didnt taste the lemon much and there was an aftertaste that i wasnt that keen on but my daughter loved them! next time i will add more lemon and make them smaller and fatter. |
