After a long day on the trail it really hits the spot. If you happen to catch a trout, you have a gourmet meal in no time! You can use dehyderated diced chicken if you wish, but add it to the spice packet so it can re hyderate. | | Ingredients | | 1 cup couscous 1 small package (1/2 cup)dried mushrooms, any type you like 1/2 cup chopped dried tomatoes (optional) 1/2 cup raisins (optional) 1/4 pine nuts, toasted or sliced almonds 2 tsps chicken bouillion granules 2Tbsps minced dried onions 1Tbsp dried parsley 1 tsp dried basil 1/4 tsp ground turmeric 1/8 tsp black pepper 1 small can chicken meat | | Directions | | Step: 1 | Make a packet of the spices, mushrooms, tomatoes and raisins.Have couscous and pine nuts in seperate baggies. Bring 2 to 2 1/2 cups cups water to a boil.Add mushroom/spice packet and let sit off the heat a few minutes to rehyderate mushrooms and tomatoes. Adjust salt as needed.
Bring back to a boil and add canned chicken and couscous, stir briefly to combine.Remove from heat and cover until all water is absorbed.If too dry add a little more hot water and let sit a couple of minutes.Sprinkle with toasted pine nuts before serving. Makes 2 hearty servings. |
