Introduction

I tested this dish last night in the lovely company of a local reporter who is doing a story on Yummyfood.
This dish goes together in a snap and is really delicious. I used cooked snow crab and penne pasta.
I'll post a picture soon, because we ate it all and I didn't take a picture! Guido's going to kill me haha.Guess I'll have to make it again soon!

Ingredients


14 oz farfalle pasta
7 oz  raw crab meat chopped *
1/2 cup white wine
12  cherry_tomatoes , cut in half or quartered if they are large, or 3 Tbs tomato_puree
3/4 cup heavy_cream
1 shallot , minced
2 Tbs extra_virgin_olive_oil
2 Tbs butter (devided use)
2 Tbs minced flat leaf parsley , divided
Sea_salt and freshly ground black pepper to taste

 

Directions
Step: 1

In a large frying pan, sautee shallot with oil and 1 Tbsp butter until golden.
Add wine and cook until the liquid is reduced by half.

Step: 2Add the raw crab meat, the tomatos and parsley .Cook on medium/high heat for 10 minutes.
Add cream and the reserved  1 Tbsp of butter. Stirring costantly ,cook for  2 to 3 minutes more until the sauce is creamy and smooth. Adjust salt and pepper to taste.

While preparing sauce,cook pasta in plenty of salted, boiling water, according to  package directions.
When the pasta is al dente, drain well and pour the pasta into the sauce.
Bring the sauce to a low boil on medium heat  for about 2 minutes, mixing the pasta through the sauce as it cooks.Garnish with the remaining  parsley and serve.

*This dish is normally prepared with raw crab. If this is not available in your area, use cooked lump crab meat and add it when the pasta is added to the sauce, just to heat the crab through.

Some tips:

You can add some pitted and finely chopped black olives at the end.

Using the cooked crab meat, I would add it when the sauce starts to become creamy: this will add more flavour to the sauce itself.

If you want fresh crab meat instead of cooked crab, ask your fishmonger to clean the crab and meat for you. You’ll be spared quite some time and a messy job.
