Introduction
This is a nice change from mint jelly for roasted lamb.
Ingredients

1 cup of packed fresh mint leaves, rinsed and dried.
1/2 cup cider vinegar
2 Tbsps granulated sugar or to taste

Directions
Step: 1

Very finely mince the mint leaves.Bring vinegar to a boil in a small saucepan. Remove from the heat, add the sugar and stir until dissolved.Pour the hot vinegar over the mint leaves. Place in a glass jat and allow to sit for several hours before using.
