Most cooks in Italy keep a small dish of salt by the stove.They grab a pinch and sprinkle over what they are cooking.A pinch is about 1/8 tsp. | | Directions | | Step: 1 | Peel, wash and pat dry the onions. Heat the olive oil in a large skillet . Add the onions and cook,.swieiling the skillet to move the onions around without breaking them, until a light golden brown. Add salt to taste, cover with a lid and cook over low heat, swiriling the pan every few minutes,until the onions are soft, about 10 minutes. | | Step: 2 | Dissolve the sugar in the vinegar, and just before removing the onions from the heat, pour it over the onions Increase heat to medium and cook a few minutes more until the sauce is reduced and the sugar starts to caramelize.
Serve warm as a sidedish or chilled as an appetizer. |

Sprinkle some "Tradizionale" Balsamic Vinegar of Modena over the onions.
You will need a loan to buy a bottle but your guests will love you! ;-)
