Served cold it is a wonderful appetizer.
Very nice for a summer nights dinner. | | Ingredients | | 1 pound small white cipolline onions
1/4 cup extra_virgin_olive_oil
1/4 cup red wine_vinegar
1 Tbsp sugar
Pinch of salt *
Most cooks in Italy keep a small dish of salt by the stove.They grab a pinch and sprinkle over what they are cooking.A pinch is about 1/8 tsp.* | | Directions | | Step: 1 | Immerse onions in boiling water for 3 minutes. Remove from hot water and place in an ice water bath. Onions should slip from the peel when squeezed slightly.
Remove the stem and top ends from the onions and pat dry with a paper towel.
Heat the olive oil in a large skillet . Add the onions and cook,.swirling the skillet to move the onions around without breaking them, until a light golden brown.
Add salt to taste, cover with a lid and cook over low heat, swirling the pan every few minutes,until the onions are soft, about 10 minutes. | | Step: 2 | Dissolve the sugar in the vinegar, and just before removing the onions from the heat, pour it over the onions
Increase heat to medium and cook a few minutes more until the sauce is reduced and the sugar starts to caramelize.
Serve warm as a side dish or chilled as an appetizer. |

Sprinkle some "Tradizionale" Balsamic Vinegar of Modena over the onions.
You will need a loan to buy a bottle but your guests will love you! ;-)
