Introduction
Homemade ice cream, it brings back wonderful memories.  My Mom would whip up a batch of ice cream mix and Dad and I would churn it. I always loved licking the dasher. 
This is my good old basic recipe and many variations can be made using it. I know, that's a lot of egg yolks, but they result in a smooth as silk texture. Let your imagination go wild. I've listed some of my own below to help you get started. When adding other ingredients like fruit that is incorporated into the mix as it freezes, you may end up with too much unfrozen mix to fit into your canister.I remove an equal amount of custard mix as the amount of fruit I add.The mix can be used to make a tasty milk shake or poured into a popsicle mold.
Ingredients

1 quart heavy_cream
1 1/4 cups whole_milk
1 1/4 cups granulated_sugar , divided
10 egg yolks
1 tablespoon vanilla_extract
Pinch of salt

 

 

Directions
Step: 1

In a heavy saucepan over medium heat, combine cream, salt ,milk. and half the granulated sugar. Bring the mixture almost to a boil. There will be little bubbles at the edge of the pan at this stage. Stir well and remove from the heat.
 

Step: 2Whisk the egg yolks together with the remaining sugar and the vanilla extract in a bowl. When themilk mixture is ready, pour a third of it into the egg mixture, and quickly whisk. Pour egg mixture into remaining hot cream and return to the heat until mixture coats the back of a metal spoon. Do not let the mixture boil or it will curdle.


Step: 3Strain custard through a fine mesh strainer and chill until cold. Pour the custard base into the ice cream canister of an ice cream maker and freeze according to manufacturer's directions.
Step: 4

 Vanilla Bean:
1 or 2 vanilla beans, split and scraped.
Place vanilla bean pod and seeds in with the milk mixture during the simmering step. Remove the pod and  proceed as directed.

Bizzare Brownie Chunk
Using the basic custard base above. When the custard base is removed from the heat, add 4 Tbsp unsweetened dutch process cocoa and mix well.
Have ready:
6 regular sized brownies, cut into small squares or broken into chunks.
1/2 cup toasted chopped pecans or walnuts
1/2 cup Reese's Pieces ™ candy
Process the ice cream as usual. When ready, remove to a large bowl and mix in the brownies, candy and nuts. Cover and place in freezer to ripen and harden.
Espresso Shock
Add 1/2 cup super strong espresso coffee to the finished custard base.
Proceed as directed.
To finished ice cream, add 1/2 cup mini chocolate chips or
1/4 cup crushed espresso beans.

Nutella
Add 1/2 cup Nutella to the warm custard base and mix well. 1 cup chopped, toasted hazelnuts really adds a great touch  to this flavor.
