Introduction

There's a big ham in my  fridge that I smoked on Saturday for my daughters visit and tomorrow I'm going to make ham salad and take pictures. This easy spread is delicious for sandwiches, especially on dill rye bread. I love it on crackers as a snack or light lunch.
All amounts are approximate and can be varied to suit individual tastes. This salad needs little seasoning, so taste before adding the seasoning salt.

Ingredients

3 cups cubed, cooked ham
3 celery ribs, washed and trimmed, cut in chunks
1 cup cubed cheddar_cheese
2 medium sized dill_pickles , cut in chunks
1 small onion , peeled and quartered
About 1/2 cup mayonnaise
1/2 tsp onion_powder
1/8 tsp seasoning_salt

Directions
Step: 1

In the bowl of a food processor, place ham ,celery and onion.Process in short pulses until mixture is in rough, large pieces.

Step: 2

Add pickles,cheese and onion and pulse in short bursts or until mixture is chopped to a medium coarse texture.

Step: 3Empty ham mixture into a bowl. Add mayonnaise, onion powder and seasoning salt. Mix well to blend. Adjust seasoning if needed. Chill about an hour before serving.

Note: This can be made with an old fashioned manual grinder. Combine all ingredients and grind together. Add the mayo and seasonings as above. The texture will be much finer than with a food processor.

I make this too! People think you're crazy when you say you're brining ham salad. Doesn't stop them from eating it up though!

My grandma used to be sneaky and make it out of SPAM!!!!!!!!!!!!
