Camping Chicken Bundles and Potatoes

Introduction

When I camped a lot I would often assemble this easy meal at home  to cook at camp. I plan this meal for the first or second night as it involves raw chicken and I never like to keep it on ice longer than that.

Ingredients

4 half chicken breasts, boneless and skinless
1 tsp onion_powder
1 tsp garlic_salt
1/2 tsp paprika
1 tsp fresh ground black pepper
3 shallots , peeled and minced
3 Tbsp extra_virgin_olive_oil
1 large bell_pepper , red or green, sliced into strips
2 medium sized zucchini , sliced
1 large yellow onion , quartered
10 small yukon_gold_potatoes
1/2 cup olive_oil
1 large sprig rosemary , leaves stripped and minced
2 tsps sea_salt

Directions
Step: 1

Slice chicken breasts into thick strips. Place in a large glass bowl. Combine seasonings, 1/2 cup olive oil and shallots and pour over chicken, tossing to mix well.

Cut aluminum foil into 12-10X10 inch squares. Place 3 layers of the foil squares for each bundle. Place some chicken strips and some of the vegetables on each square.Fold edges of foil over contents to make a tight packet, crimping seams tightly to prevent leaks.
Place bundles in a gallon zip lock baggy in the bottom of the cooler.

Step: 2

Slice the potatoes and mix them with the extra_virgin_olive oil, rosemary and salt to coat well and prevent oxidation. Pack them in a gallon baggie in the cooler. .

Step: 3

At camp pour  the potatoes into a foil cake pan covered tightly with 2 layers of foil. Place on the grate over the hot coals and cook about 20 minutes, shaking pan every so often. After the potatoes have been cooking 10 to 15 minutes, place the chicken bundles on the grate next to potatoes and cook 10 to 12 minutes on each side,depending on how hot the fire is. I use charcoal for all cooking fires unless you know what type of wood there is and weather or not it's polluted with chemicals.

These sound good. I remember my grandmother making hamburger patties and putting thin slices of potatoes and onions on top of them and wrapping them in foil and baking them in the coals.

I can't wait for my kids to get bigger so we can take them camping!
