Introduction
Pesto doesn't necessarily mean basil.  
Try this red pesto  with tomatoes, almonds and ricotta salata over a dish of fusilli.  It's Yummy Food!
Ingredients

2 ripe but firm red tomatoes
30 almonds
5 bitter almonds
1 garlic_clove
12 large basil leaves
3 Tbs ricotta_salata or queso_fresco
1 Tbs grated pecorino
Extra_virgin_olive_oil
Salt
Coarse sea_salt

Directions
Step: 1Peel and seed the tomatoes, sprinkle  with salt and let sit for half hour  to draw out most of their juice.
Meanwile, blanch the almonds and mash them in a large mortar  with a pestle (or food processor fitted with a steel blade) with a pinch of coarse sea salt (1/8 tsp) until ground.
Add  tomatoes, cheese, and the basil leaves.
Keep working, drizzling extra virgin olive oil from time to time,  until the sauce is soft and creamy.
