Introduction
This is a super easy recipe for a nice pasta dish.
I use one chicken stock cube and one beef stock cube but vegetarian can use vegetable broth and eventually skip the cheese.
Ingredients
3/4 lb ditaloni pasta
2/3 lb potatoes
1 big ripe tomato chopped
1 stalk of celery
1/2 onion
1 carrot
1 Tsp Extra virgin olive oil
1 chicken stock cube
1 beef stock cube
5 cups boiling water
1 oz grated pecorino romano
black_pepper to taste
Directions
Step: 1Peel and dice potatoes in small cubes (about 1" size)
Mince onion carrot and celery
In large casserole, saute  onion celery carrot, until onion is translucent.
Add potatoes, the chopped tomato,  stock cubes, and hot water: stir until cubes dissolve.
Let simmer for 45 minutes on very low heat.
Bring back to a rolling boil, add pasta and cook al dente according to package. (6 - 8 minutes)
Let sit for few minutes before serving.
Sprinkle  pecorino cheese and fresh ground pepper direcly on the dish.
Garnish with  minced parsley if desired.
