Time | 5 min | | Cook Time | 15 min | | Introduction | | An easy dish from Ciociaria, makes a quick dinner with a salad, or grilled vegetables as a sidedish. | | Ingredients | | 2 links italian pork sausage 6 large eggs 2 Tbsp extra_virgin_ olive_oil Salt and black pepper to taste | | Directions | | Step: 1 | Remove the casing from the sausage and break the meat up.In a large frying pan, cook crumbled sausage with one tablespoon extra virgin olive oil on low heat until brown. When done, remove from heat and set aside on absorbent paper.
| | Step: 2 | Beat eggs in a bowl. Taste sausage first: it could be already very salty, and then add the sausage,salt and pepper.
Heat the other tablespoon of oil and when it start smoking, pour in eggs and sausage mixture. cook for a couple of minutes on each side, until golden on the outside, but still moist inside (it will get firmer when cool)
Let cool to lukewarm on absorbing paper before serving. |
