Introduction
Bubble and squeak! Its the most traditional English dish I know of! Its fried, but then everything from pre-war times was! Its lovely on a dreary dark day and really cheers me up. This is the the third in my selection of traditional English meals!
Ingredients

450g / 1 pound of potatoes , cooked and mashed
225g / 8oz cabbage or brussel_sprouts , cooked and finely chopped
25g / 1oz butter or oil (butter is traditional)
1 onion , finely chopped

Directions
Step: 1Heat the butter/oil in a large frying pan.
Step: 2Add the onion and cook until soft and transparent.
Step: 3Add potatoes and cabbage (or sprouts - cabbage is traditional) and mix well
Step: 4Fry over a medium heat, turning occasionally for 15 minutes or until golden brown. Serve with bacon and eggs for breakfast or as part of a supper dish.
