Buttermilk Cornbread

Introduction
I have just discovered cornbread as we don't have it here in England. This is really moist and yummy. My favorite so far.
Ingredients
1/4 pound butter (1/2 cup)
2/3 cups white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking_soda
1 cup cornmeal
1 cup all_purpose_flour
1/2 teaspoon salt
Directions
Step: 1Pre heat oven to 375 F / 175 C. Grease an 8 inch square pan or oven proof frying pan.
Step: 2Melt butter. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture. Stir in cornmeal, flour and salt until well blended and few lumps remain. Pour batter into prepared pan.
Step: 3Bake in a pre heated oven for 30-40 minutes or until a toothpick inserted in center comes out clean.

I introduced Guido and his family to chili and now they are addicted. Chili is very good served with corn bread!

Paula,I just noticed that you have listed 1/2 tsp baking soda in this recipe. Normally baking powder is used in cornbread. When I make this, I use 1 rounded tablespoon of baking powder and it comes out wonderful.
