Cinnamon Plum Jam

Introduction
Im not at all a jam fan, but this is lovely. I used to make plum jam when I was younger but it was always a bit bland so I had a look round at other jam recipes to see what I could do to make it a bit more flavourful and I decided that cinnamon was the way to go. This goes lovely with Kate's buttermilk scones!
Ingredients

7 Cups of Preserving Sugar (or 7 cups regular sugar and 1 x 1.75 ounce package of powdered pectin)
5 cups of peeled, pitted and chopped plums
1/2 cup of water
1/3 cup of lemon juice
1/2 teaspoon ground cinnamon
A little butter

Directions
Step: 1

Put the plums in a large saucepan with the water and lemon juice and boil until soft.

Prepare jars and rings and lids as directed in the canning glossary .

Step: 2Add the suagr (and pectin if using), butter and cinnamon and bring to the boil (the butter stops the jam from foaming at this point).
Step: 3Boil for about 10 minutes, stirring constantly.
Step: 4Pour jam into sterilised jars, leaving a half inch headspace. Wipe any spillage from the rims and put the lids on tight. turn the jar upside down for a few seconds and then rest the right way up until cooled. The temperature of the jam will seal the jars.
