Lemon Rice

Introduction
This is a nice side dish with roast chicken or grilled fish. I always use jasmine rice because of the flavor and it cooks up so nice and stays moist but fluffy.
Ingredients

1 cup uncooked jasmine_rice
1/2 tsp leaf oregano or 1 Tbsp fresh chopped oregano
Few grinds fresh black pepper
Sea_salt to taste
5 Tbsps olive_oil
3 Tbsps lemon juice or to taste
2 tsps lemon zest
2 cups chicken_stock or broth
2 Tbsps butter

Directions
Step: 1

In a deep skillet, heat olive oil. Add rice and cook over medium heat, stirring constantly until rice is lightly browned. Add the chicken stock and oregano. Turn heat down to a simmer and cover the pan. Cook rice for about 20 minutes, stirring occasionally. When rice is tender and liquid is absorbed, add lemon juice , zest and butter. Mix well.
