This sauce combines ordinary ingredients for an extraordinary TASTE !! Enjoy
Ingredients
2 Tbl Extra Virgin Olive Oil
1 Tbl Fresh chopped garlic
2Tbl Fresh chopped basil
1 Tbl fresh chopped oregano
1/2 Cup of canned roasted red peppers, chopped
1/8 Cup chopped black olives
1-14oz. can diced tomatoes or canned romas (squished)
2 tsp sugar
1Tbl balsamic vinegar
Directions
Step: 1Heat oil in a skillet and lightly saute the garlic. Add the herbs and cook for 20 seconds. Add the red peppers and cook for 5 minutes. Add tomatoes, sugar and taste. The sugar is to balance the acidity of the tomatoes. Add Salt and Pepper to taste. I prefer to cook with Kosher salt and fresh ground pepper from my peppermill. Add the balsamic vinegar and cook for another 15 minutes. Serve with your favorite pasta. This is also excellent baked on top of a breaded chicken breast with smoked or regular mozzarella cheese. Enjoy !!!
