It was the hottest day of the year and it melted in my car on the way to work! My boss said it looked like elephant poo - hence the name!!! I was so upset because I was so proud of it, it looked lovely in my fridge :-( The second time I made it, it was a lot cooler outside and it stayed perfect! | | Ingredients | | For the Cake: 2 cups granulated_sugar 1 3/4 cups all_purpose_flour 3/4 cup cocoa_powder 1 1/2 tsp baking_powder 1 1/2 tsp baking_soda 1 tsp salt 2 eggs 1 cup milk 1/2 cup vegetable_oil 2 tsp vanilla_extract 1 cup boiling water
For The Frosting: 1/2 cup butter 2/3 cup cocoa_powder 3 cups icing sugar (confectioners_sugar) 1/3 cup milk 1 tsp vanilla_extract | | Directions | | Step: 1 | Heat oven to 350 F. Grease and flour 2 9 inch round baking pans. Stir together 2 cups granulated_sugar, 3/4 cup cocoa_powder, baking_powder, soda, and salt in a large bowl. Add eggs, milk, oil, and vanilla and beat on a medium speed for 2 minutes. Stir in boiling water - batter will be thin. pour into prepared pans. | | Step: 2 | Bake 30-35 minutes. Cool 10 minutes, remove from pans and cool completely on wire racks. Frost with frosting. | | Step: 3 | To make frosting - Melt butter, stir in cocoa. Alternately add powdered sugar and milk, beating to a spreading consistancy. Add small amount of additional milk if needed. Stir in vanilla. Frost cake.
