Introduction
I just descovered Stollen, and it's lovely! I just had to find a recipe for it, and this one sounds great.
Ingredients
For the Dough:
225g (1 cup ) All_Purpose_Flour
1/2 Tsp Salt
1/2 Tsp Mixed (Allspice) Spice
50g (2 Tbsp) Butter
1 Tsp Sugar
150g (5 ozs) Dried Mixed Fruit
25g (1 oz) Whole Glace_Cherries
25g (1 oz) Sliced  (Flaked) Almonds
2 Tsp Dried_Yeast
1 Small Egg, Beaten
100ml (1/2 cup) Warm Milk
100g (3 1/2 oz) White_Marzipan

For The Topping;
25g (1 Tbsp) Butter , Melted
50g ( 2 Tbsps) Icing Sugar (Confectioners_Sugar), Sifted

Directions
Step: 1Sift the flour and spice into a bowl and rub in the butter. Stir in the sugar, dried fruit, cherries, almonds and yeast. Make a well in the centre and add the egg and milk to make a soft dough. Turn on to a floured surrface for 2-3 minutes. Roll out into a flat oval shape 23cm x 18cm,(9x7 inches) then roll out the marzipan to a strip 18cm x 5cm ( 7x1) and place in the center of the dough. Fold the sides over the marzipan so that they just overlap, and seal well.
Step: 2Place seam side down on a greased baking tray. Cover with oiled cling film (saran wrap) and leave to rise in a warm place for approximately 1 hour or until doubled in size.
Step: 3Bake in a pre-heated oven at 180C/gas mark 4 (350 F) for 40 minutes or until it sounds hollow when tapped on the base (cover with foil if it's browning too quickly).
Step: 4Brush the warm Stollen with melted butter and dust with icing sugar (confectioners sugar). Cool on a wire rack, then wrap in foil, freeze or keep in a cool place for up to 4 weeks.
