Introduction
In this appetizer, we  join a classic italian cheese antipasto with the exotic  avocado.   
Ingredients
2 avocados
1/2 lb emmenthal cheese
2 Tbsp  crumbled walnuts
5 oz sweet (creamy fresh) gorgonzola cheese
2  Tbsp  cream
4 leaves fresh basil
Salt and pepper
 
Directions
Step: 1Cut avocados in two part lenghtwise, remove seed and scoop out flesh with a spoon trying to not smash it.
Dice the flesh in small pieces.
Dice the emmenthal cheese same size of the avocado.
Mix together cheese, avocado cubes, and walnuts. Adjust salt if desired and fill the avocados shell with the mixture.
Step: 2Mix gorgonzola, cream, basil, and some fresh ground pepper  together  in a bowl and blend with an electric mixer until creamy. If too dense, add some more cream. Sauce should be soft  but not runny.
Step: 3Pour gorgonzola sauce over the avocados and serve.
