Introduction
This is a great terriyaki marinade. Try it on chicken and pork also. I boil the leftover marinade throughly, at least 30 minutes at a good boil, and then save it for a basting sauce. I've never killed anyone yet and a friend of mine in the food safety industry says this is a safe method.
Ingredients

1 cup good quality soy_sauce (I like Kimlan brand best)
1/2 cup sake or dry white wine
3 large garlic_cloves , crushed
2 teaspoons crushed fresh ginger root
1/4 cup water
1/2 cup granulated_sugar
1/4 cup honey
1 teaspoon sesame_oil
Toasted sesame_seeds (optional)
12 meaty shortribs with the bone in (estimating 3 ribs per person)
2 white onions thinly sliced

 

 

Directions
Step: 1

Combine soy sauce, garlic, sugar, honey, water and sake in a heavy 2 quart sauce pan. Bring to a boil and cook for 20 minutes.Taste sauce and if it seems to salty add a little more water and sugar. Cool sauce a bit and add sesame oil


 

Step: 2

Place ribs in a deep pan and cover with marinade. Marinate 3 hours or overnight.  Thinly slice onions and place in the bottom of the roasting pan. Arrange shortribs over onions and pour a bit of the marinade over the meat and onions and bake uncovered at 350 for an hour. Baste with marinade once or twice durning cooking.Test for doneness, ribs should be very tender. Sprinkle ribs with sesame seeds and serve on a bed of white rice. Pass the boiled remaining sauce on the side if you wish.
