It's definately one for Christmas, and can be kept in the fridge for up to 6 months in an air tight container. | | Ingredients | | 3 Cups Candied Mixed Fruit 1/2 Glace_Cherries Roughly Chopped 1/2 Cup Candied Mixed Citrus Peel 1 Cup Flaked Almonds 3/4 Cup Butter 1 Teaspoon Ground Allspice 1/2 Teaspoon Baking_Soda 1 Cup Milk 3 Cups Sifted Self_Raising_Flour 2 Eggs 1 1/2 Cups Granulated_Sugar | | Directions | | Step: 1 | Pre-heat oven to 160 C (325 F) and line an 8 inch, deep sided cake tin with greaseproof paper (parchment paper). | | Step: 2 | Place the fruit, cherries, peel, almonds, sugar, butter, mixed spice, baking soda and milk in a large saucepan. Bring to the boil and simmer for 5 minutes. Let the mixture cool to room temperature. | | Step: 3 | Stir in the flour and eggs. Pour the batter into the prepared pan. Wrap the outside of the pan with brown paper or newspaper (i used parchment paper). | | Step: 4 | Bake at 160 C (325 F) for 20 minutes then reduce temperature to 150 C (300 F) and contine to bake for 1 1/2 hours. Remove tin from oven and allow to cool in tin for 5 minutes then turn out onto a wire rack, remove greaseproof paper and leave until cool. |

I have my Grammy's reccicpe for fruitcake and in many ways these are similiar. Paula, try putting t his cake in a container and soaking it with brandy...yummm! Makes it so moist. |
