Introduction
As I've pickled pretty much everything in my kitchen, I decided to make pickled squash tonight. They look lovely! I steamed mine but you could also try it with raw squash for a more crispy texture.
Ingredients

1 1/2 Pounds Butternut_Squash & Pumpkin (Doesn't matter how much of each)
2 Small Onions Sliced Thinly
2 Garlic_Cloves , peeled and smashed open
3 Cups Distilled_White_Vinegar
3 Teaspoons Mustard_Seed
3 Teaspoons Peppercorns

Directions
Step: 1

Peel the squash and pumpkin, and slice into thin spears. Steam lightly for 15 minutes with the garlic and onions.

Step: 2While the vegetables are steaming, combine the vinegar, mustard seed and peppercorns in a saucepan, and bring to the boil. SImmer for 5 minutes.
Step: 3Place the squash into sterilised jars, and pour the vinegar mixture over the top.
Step: 4Close the lids on the jars and process in a hot water bath for 10 minutes or until the lids seal. Leave at least a month before opening.
