Introduction
	Another super easy pasta dish. Grated Pecorino cheese really gives a boost to the flavor.
Ingredients
	2/3 lb penne_pasta 1 oz butter 3 oz smoked bacon , or smoked pancetta (if you can find it), finely diced 1 oz grated pecorino_romano cheese 1 oz grated Parmigiano_reggiano 3/4 cup cream 6 basil leafs, minced Freshly ground black pepper Sea_salt
Directions
Step: 1	Cook pasta 'al dente' in plenty salted water, according to package directions.
Step: 2	Meanwhile saute bacon or pacentta with the butter, until crunchy. In a saucepan, over low heat, mix togheter cream, pecorino and parmigiano until perfectly incorporated..
Step: 3	Drain pasta, put into a serving bowl, pour in the sauce and the bacon bits: stir well. Sprinkle with black pepper and serve garnished with basil. Note: a full bodied red wine is a perfect match with this dish.
