Elbow Pasta With Green Tomato Sauce

Introduction
Another easy pasta recipe in the perfect italian style.
Be sure the tomatoes are really green inside as well as outside. This will bring a pleasant little sour taste.
Ingredients
3/4 lb   elbow_pasta
2 lbs  green_tomatoes
3 Tbs   extra_virgin_olive_oil
2 TBsp  grated Pecorino_romano cheese
2 garlic_cloves
1 Small bunch of fresh basil
Sea_salt
Black pepper

 
Directions
Step: 1Preheat oven to 190°C /375°F
Carefully  wash tomatoes and slice them about 1/4" thick
Step: 2Grease a baking dish with one tablespoon olive oil and arrange the tomato slices in one layer.
Mince  garlic and basil  and sprinke over tomatoes. Season with salt and pepper . Drizzle with the remaining olive oil.
Bake for about one hour until tomatoes are very tender and start caramelizing.
Remove from oven and mash with a fork until you obtain a creamy sauce.
Keep warm.
Step: 3Meanwhile, cook pasta al dente according to package directions, in plenty salted watewr.
Drain  and put into a serving bowl.
Pour in the sauce, add pecorino,  another  sprinkle of freshly ground pepper, toss very well  and serve.

This sauce is wonderful! It has a nice, fresh quality and a little bite from the green tomatoe's.
