This will bring a pleasant little sour taste. | | Ingredients | | 3/4 lb elbow_pasta 2 lbs green_tomatoes 3 Tbs extra_virgin_olive_oil 2 TBsp grated Pecorino_romano cheese 2 garlic_cloves 1 Small bunch of fresh basil Sea_salt Black pepper
| | Directions | | Step: 1 | Preheat oven to 190°C /375°F Carefully wash tomatoes and slice them about 1/4" thick | | Step: 2 | Grease a baking dish with one tablespoon olive oil and arrange the tomato slices in one layer. Mince garlic and basil and sprinke over tomatoes. Season with salt and pepper . Drizzle with the remaining olive oil. Bake for about one hour until tomatoes are very tender and start caramelizing. Remove from oven and mash with a fork until you obtain a creamy sauce. Keep warm. | | Step: 3 | Meanwhile, cook pasta al dente according to package directions, in plenty salted watewr. Drain and put into a serving bowl. Pour in the sauce, add pecorino, another sprinkle of freshly ground pepper, toss very well and serve. |
