Devilish Fennel

Introduction
A spicy vegetable sidedish that goes well with  boiled meats or roasted chicken.
Ingredients
4 fennel bulbs
6 anchovy_filets
1 Tbsp  white wine_vinegar
1 tsp dijon_mustard
Juice of one lemon
6 Tbsp extra_virgin_olive_oil
Directions
Step: 1Carefully wash fennel bulbs, removing  feathery tops and the tough root end, but leave a little of the root end to hold the bulb together. Slice into small wedges.
Step: 2Dissolve the dijon mustard in the vinegar.
In a large skillet or saucepan, melt the anchovie fillets in the olive oil, over medium heat.
Step: 3Add fennel,  vinegar, and 1/4 cup water  and cook, covered,  on low heat for 45 minutes to one hour.
When fennel is tender , add the lemon juice,  stir well for 2 more minutes and serve.
