Introduction
This is an easy dish from Palermo, a wonderful city in the Sicily region of Italy.
I'm not sure that chickpea flour can be found worldwide, but  I think  a well assorted Italian or Indian deli shop should have it. Serve alone as an appetizer with a topping or use to make a delicious sandwich.
Kate's Note: here in Southern Calif, Garbanzo flour can be found at Henry's Market or Sprouts.
Ingredients
7 oz  chickpea (Garbanzo) flour  (farina di ceci)
2 tsp salt
1/8 cup chopped parsley
2.1/4 cups water.
Corn oil for frying
Directions
Step: 1Mix chickpea flour, chopped parsely and cold water stirring until the flour is dissolved.
Cook on medium heat, stirring continuously to avoid lumps, for about 25 minutes. When ready, take off of stove and spread out on a cold surface like on a large greased baking pan or countertop, spreading out with a spatula until about 1/5 inch thick. Let cool off then cut into shapes desired.
Deep-fry pieces  in corn oil until golden brown.
Serve hot.
