Snowball Cookies

Introduction
This is one of my favorite Christmas cookies and I have made them
since I started baking as a child. I store the baked cookies in a
large container partially filled with powdered sugar. This keeps the
cookies freshly coated and beautiful. I like to tuck a whole roasted
hazelnut or chocolate kiss in some of the dough balls before
baking. Sometimes I dip these in melted white chocolate instead of powdered sugar.
Ingredients
1 cup soft butter
1/2 cup sifted powdered_sugar + more for dusting
2 tsp vanilla_extract
2 1/4 cups all_purpose_flour
1/4 tsp salt
1 cup ground or finely chopped toasted almonds or hazelnuts
Directions
Step: 1Using an electric mixer, cream butter, sugar and vanilla until very
light and fluffy.Stir in flour, salt and nuts.
Wrap dough in plastic wrap and chill throughly.
Step: 2Roll dough into 1 inch balls. Place on ungreased baking sheet (cookies do not spread) and bake in a pre heated oven (400F) for 10 to 12 minutes, until just pale golden.
Step: 3While cookies are still hot, roll in powdered sugar. Place on a tray to cool completely and then roll again in powdered sugar.

i used walnuts because i brough the wrong nuts at the shops! they were great, will definately make again :-)
