Introduction
Prime Rib is the king of roasts in my opinion. My sister Brenda first told me about the sitting in the oven trick years ago. I have to admit I was skeptical, but the roast turns out perfect and delicious.
Ingredients
1 5 pound Prime Rib roast
2 large garlic_cloves , crushed
1 tsp fresh ground black pepper
1 Tbsp paprika
2 tsp sea_Salt
Directions
Step: 1Peel and crush the garlic and combine the dry seasonings in a bowl.
Step: 2Remove the roast from the fridge and rub all over with the seasoning blend and crushed garlic. Allow the roast to stand at room temperature for  1 hour.
Preheat the oven to 375 degrees F.
Step: 3Place the roast on a rack in a roasting pan
with the rib side down and the fat side up.
Roast for 1 hour without opening the oven door.
Turn off the oven at the end of that hour. Leave the roast in the oven for 3 hours without opening the oven door. This is really important so remember, no peeking!.
Step: 4About 30 to 40 minutes before serving time, turn the oven back on to 375 degrees F and reheat the roast.
Remove the roast to a heated platter, let the roast sit for about fifteen minutes and then carve.
