| Introduction |
| This method produces a delicious, juicy and succulent ham. I think fruit wood is best for smoking pork as it gives a nice sweet flavor to the meat. If you can find fruit tree prunings that have not been sprayed with pesticides, grab them. I have been having trouble finding fruit wood chunks. Be sure and save the bone from this ham! It makes the best beans and leftover ham cooked this way makes spectacular ham salad. |

| 1 Shank end ham 1 recipe ham_glaze 1 can beer 2 cups apple juice 2 cups fruit wood chunks or hickory chunks |
| Directions |
| Step: 1 | You will need a water smoker for this. I use an electric Brinkman water smoker, but you can use a large covered Weber BBQ and follow their instruction's for indirect cooking. |
| Step: 2 | Trim ham of rind and fat. Place ham in a large pan or bowl and spoon glaze all over. Let sit in the fridge overnight.

| Step: 3 | Remove the ham from the fridge one hour prior to smoking. Prepare the water smoker. Soak 2 cups apple or other fruit wood (my prefered type) or hickory wood in hot water for 1 hour.Add beer and apple juice to the water pan and the rest hot water, until about half full. |
| Step: 4 | Add soaked wood chunks and position the water pan and the grill at the top position. Place the ham on the grill rack and smoke 5 to 6 hours, depending on size of your ham. Brush with any remaining glaze every hour or so and replenish water pan as needed. |
